Cabernet Sauvignon jest powszechnie uważany za króla win czerwonych. Kiedy myślimy o najznakomitszych winach na świecie, najczęściej są to wina wyprodukowane właśnie z Cabernet Sauvignon. Odmiana ta jest także znana jako Petit Cabernet, Sauvignon Rouge lub Vidure. Cabernet Sauvignon można uprawiać praktycznie we wszystkich regionach upraw winorośli, które charakteryzują się niezbyt chłodnym klimatem. Cabernet Sauvignon to także szczep bardzo odporny na choroby.

Winogrona Cabernet Sauvignon mają dużą zawartość tanin, więc aby uzyskać delikatniejsze i bogatsze w smaku wino, są one często łączone ze szczepami o mniejszym ich natężeniu. To the most common mixtures belongs famous 'Bordeaux blend' of Cabernet Sauvignon with Merlot. Popular are also combinations of Cabernet Sauvignon with varietals like Syrah, Cabernet Franc or Petite Verdot.

In order to soften its quite aggressive tannins, the wines with high percentage of Cabernet Sauvignon are usually aged in oak for over a year. Cabernet Sauvignon enjoys the largest ageing potential among the red wines and in average its ageing lasts for five to ten years. However, the world-class examples can mature for decades.

The classic Cabernet flavour is characterised by great intensity and depth, with easily distinguishable flavor of dark fruits, such as blackcurrant, plum and black cherry. It is also touched by the hints of mint, cedar, olive as well as anise or tobacco. In warmer regions wine will be subtle and elegant, while the wines from grapes growing in cooler areas are marked by pronounced vegetal, bell pepper, oregano and tar flavors. Among the Cabernet wines, its best representatives are medium to full-bodied. Properly aged in either French or American oak for more than a year, the wine will acquire woody and vanilla flavors with softer tannins. Due to its interesting evolution with time, Cabernet Sauvignon is ideal for storing in the cellar.
